Valentine’s Day is right around the corner, so I wanted to share one of my favorite recipes that is sure to leave a lasting impression on that special someone. I have not made this dessert in a while, but I think about it often. It’s that good! There is just something about warm, gooey, melted chocolate that makes these cakes so irresistible. It’s no wonder that many restaurants include similar desserts on their menus…it’s a guaranteed top seller.

What I love about this recipe is that it is really easy and fast. If you have unexpected company and need to whip something up that will make you look like a rockstar, this is it!

Instructions
  1. Preheat oven to 425°F. Butter 4 (6-ounce) custard cups or soufflé dishes. Place on baking sheet.
  2. Microwave chocolate and butter in large microwavable bowl on HIGH 1 minute or until butter is melted. Stir with wire whisk until chocolate is completely melted. Stir in wine, vanilla and confectioners' sugar until well blended. Stir in eggs and yolk. Stir in flour, cinnamon, ginger and cloves. Pour batter evenly into prepared custard cups.
  3. Bake 13 to 15 minutes or until sides are firm but centers are soft. Let stand 1 minute. Carefully loosen edges with small knife. Invert cakes onto serving plates. Sprinkle with additional confectioners' sugar. Serve immediately. Tip: All ovens are different so be sure to test the center of the cake at around the 13-15 min mark. I needed to leave mine in the oven for a total of 18 minutes in order for the cake to hold its shape when inverted.
  4. Optional: I suggest that the first time you make this recipe do not add any embellishments. Then the next time, try it with a raspberry sauce or a salted caramel sauce or for the chocoholic, a dark chocolate ganache.
  5. Tip: You can also serve the cakes right in the ramekins.
